Fowler's Forest Dairies offer 14 different cheeses made from cows milk produced on their farm in Earlswood.
- Original Little Derby
This mature cheese has been firmly established by Fowlers for over 150 years. It is dressed and then turned regularly, whilst maturing in the cellars for at least 7 months. Only when the Little Derby cheese has reached its optimum flavour is it brought out, the cloth removed, and the cheese washed in red wine. Whole cheeses are wrapped in parchment paper and quarters are shrink wrapped for protection & delivery. - Original Sage Derby
A mellow flavoured cheese traditionally layered & topped with a sprinkling of sage. The recipe for this cheese is over 100 years old. It is available in full rounds, half moons and random weight pre-packs. - Warwickshire Truckle
This traditional cheese is made to a traditional recipe after 75 years. The creamy texture and nutty flavour are becoming firm favourites of connoisseurs of cheese. The truckle is cloth bound & waxed and a full cheese weighs approximately 6kg. This cheese is available as whole truckles, halves, quarters or random weight pre-packs. - Warwickshire Truckle with Cracked Black Pepper

A traditional hand-crafted Warwickshire Truckle is now available delicately smoked with oak wood, giving a unique flavour to the creamy texture. The truckle is cloth bound whilst maturing in the cellars and when ready for sale is stripped & smoked. Full rounds weigh approximately 1kg. This hand crafted traditional Blue Cheese is soft rinded and has a firm but creamy texture. It is matured in our humidity-controlled cellars, which allows the bluing to take place without hurrying the maturing process. Full cheeses weigh approximately 3kg. Fowler's are the oldest cheese making family business in England and are continuing the traditions of handcrafted cheeses at the dairy in the leafy pastures of Earlswood. The same care and traditional skills used in Derbyshire and handed down since before 1840 to the 13th generation are today producing gold & silver award-winning cheeses.
At Fowler's Forest Dairies there are also the family cheesemaking secrets, handed down through generations, and the high calcium water pumped from a 1000 foot deep bore hole on the farm adds to the flavour and texture of the cheese.
All milk is first pasteurised at 72oC to kill bacteria harmful to humans. Culture is then added & allowed to ripen for 40 - 45 minutes. Rennet, suitable for vegetarians, is added and left to set for 45 minutes.
The coagulum is then cut to allow the solids and the liquid to separate. The curds & whey are then stirred & scalded, before the whey is drained off.
Salt is added at the milling operation to the curds, before they are packed into moulds to make 'green' cheese. Pressing the moulds extracts any remaining whey and the moulds are kept in press overnight before packing and clothing.
Fowler's Farmhouse cheeses are stored and left to mature in the cool cellar:
- after three months, it is ready to be eaten as a mild cheese
- a further three months adds to the taste
- at twelve months old, the cheese is extra mature
On rind traditional cheeses are matured in the humidity controlled cellars for a minimum of seven months.
